I know I sure am, but today I’ve got one more fabulous cookie recipe to add to your must-make list.
Chile mocha shortbread cookies! Â Aren’t these just the cutest? Â I love the fluted heart shape, and that sprinkling of red-hot sugar.
You may remember a couple months ago I posted a tutorial on how to make a chile mocha at home. Â Did you like that one? Â I am a huge fan of the Starbucks Chile Mocha drink. Â I love the combination of rich coffee and chocolate, and the little hint of cinnamon and warm spice is just so perfect for this time of year. Â It warms you from the inside out!
So I jumped at the chance to recreate these flavors, in cookie form, for Go Bold with Butter.

Chile Mocha Shortbread Cookies
Ingredients
- 1/2 cup (113.5 g) unsalted butter
- 2/3 cup (133.33 g) granulated sugar
- 1 tablespoon oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon (0.5 teaspoon) kosher salt
- 1 large egg
- 1/2 cup (43 g) unsweetened cocoa powder
- 1/4 cup (32 g) cornstarch
- 2 1/2 teaspoon (2.5 teaspoon) ground cinnamon
- 2 teaspoons instant espresso powder
- 1 1/2 teaspoons (1.5 teaspoons) ancho chile powder
- 1/8 teaspoon (0.13 teaspoon) cayenne pepper
- 1 1/2 cups (187.5 g) all-purpose flour, (you may need as much as 2 cups)
- 4 ounces melted bittersweet chocolate, (for garnish)
- additional ancho powder, (for garnish)
- red decorating sugar, (for garnish)

Thank you Sima! Your rose flavored cookies sound amazing! I just love that idea. In this recipe I used cold butter, just like I do with the vanilla cut-out recipe. I think it really helps the cookies to hold their shape. Thanks again and I’m so glad you and your boys enjoyed!
