Grilled Berry Pizza with Whipped Ricotta
Throw this easy honey whole wheat pizza dough on the grill and top it with a lightly sweet and fluffy whipped ricotta and fresh summer berries! It’s a beautiful and delicious summer snack or dessert.

I hope you’re busy with lots of fun stuff today. I’m about to take off for the day with my boys. We’re going to do a hike and then get some lunch and ice cream, and then later tonight we’ll be grilling up some dogs and watching fireworks.
I know this sounds crazy, but the last time we had hot dogs I topped mine with pineapple, avocado, red onion, cilantro, and sriracha and I’m telling you, it was the best hot dog I have EVER had. It’s a weird flavor combination but it really works- you’ve gotta give it a try!
So- busy day! I’ve only got a few minutes to talk at ya so I’m going to keep it short and sweet.
This is such a fun recipe for those days where you just want to do nothing but be outside. In other words, pretty much every summer day!
The combination of honey and whole wheat, yeast-y and grilled to smoky perfection, along with lightly sweet, fluffy whipped ricotta and juicy fresh berries is just perfection. You can eat it warm off the grill or just nibble on it at room temp- either way.
You’ll love this dough recipe because it’s so simple to make and there’s no down time whatsoever. No waiting for it to rise or anything like that. And when you use your stand mixer + dough hook you don’t even have to knead it.
Pop it on the grill to get nice charred marks on each side and then top it. It’s that simple and so perfectly summery!

Grilled Berry Pizza with Whipped Ricotta
Ingredients
- 1 cup (125 g) all-purpose flour
- 1/4 ounce (7.09 g) active dry yeast, (1 packet)
- 3/4 teaspoon (0.75 teaspoon) kosher salt
- 2/3 cup (166.67 ml) warm water, (not hot)
- 3 tablespoons neutral-tasting oil, (such as vegetable oil or grapeseed oil)
- 2 tablespoons honey
- 3/4 cup (90 g) whole wheat flour, (you may need as much as 1 1/4 cup)
- Semolina, for dusting the pan
- 2 ounces (56.7 g) cream cheese
- 1/2 cup (60 g) powdered sugar, (plus more for garnish)
- 1 teaspoon vanilla extract
- 1 tablespoon (1 tablespoon) lemon zest, (zest of 1 lemon)
- 1/8 teaspoon (0.13 teaspoon) kosher salt
- 2 cups (492 g) whole-milk ricotta
- 2 tablespoons heavy cream
- 16 ounces (453.59 g) fresh strawberries,, hulled and quartered
- 8 ounces (226.8 g) fresh blueberries
- 4 ounces (113.4 g) fresh raspberries
Instructions
For the crust
- Place the all-purpose flour, yeast, and salt in a large mixing bowl, and stir together.
- In a separate bowl, combine the water, oil, and honey. Pour the liquid ingredients into the dry ingredients and mix until combined.
- Gradually add the whole wheat flour, just until the dough pulls together into a ball and no longer sticks to the sides of the bowl.
- Knead the dough for 3 to 5 minutes, or until it feels smooth and elastic. Allow the dough to rest for 10 minutes.
- Preheat the grill to 550°F.
- Flatten/stretch the rested dough to a thickness of about 1/4″. Transfer it to a cookie sheet dusted with semolina. Slide the dough onto the grates of the hot grill, and cook for 3 to 5 minutes on medium heat, or until browned on the bottom. Flip the dough over and cook the other side for an additional 2 to 3 minutes.
For the topping
- Place the cream cheese, sugar, vanilla, lemon zest, and salt in a large bowl, and whip together until smooth. Add the ricotta and cream, and whip until fluffy.
- Spread the cheese mixture over the warm flatbread, top with fresh berries, and dust with powdered sugar.

How delicious!! I don’t eat hot dogs, but I actually really like that combination you added to it, so I may have to give it a try, even if its on a burger or something. I’ve never had a sweet pizza before, but it’s something I’ve thought about a lot in my life, I don’t know why I haven’t made one yet, but this may have to be my first one!
