Good morning everyone!  How was your weekend?  I just returned from my week-long vacation at the Outer Banks of NC, and right now everything’s in an uproar and I’m all about easy recipes that take no time to prepare.  I came up with this idea a few months back and this just seems like the perfect time to share.  Especially since we’ve probably just got a few more weeks to enjoy the summery flavors of melon, blueberries, and fresh mint!

This is an idea that just doesn’t get much easier.  It’s a lot like a fruit salad, but for the dressing we are using a drizzle of Pure Leaf Tea.  The flavors work together so well!

For some reason, sweet tea just takes me right back to my summers as a kid.  We didn’t drink a lot of iced tea when I was growing up, except in the warmer months.  By the time the school year ended, my mom was brewing ice tea on the regular.  There was always a pitcher of it in the fridge, all summer long.  When I took my first sip of Pure Leaf it took me right back to those lazy summer dinners of barbecue chicken and cold potato salad.

And these melon balls with tea, blueberries, and mint would fit right in on that table.  As a side dish or a dessert, or even as an accompaniment to an elegant brunch, this dish couldn’t be more summery and refreshing.

I used a melon baller to make this prep extra pretty, but if you’d prefer, you could just cut the melon up into bite-sized chunks.  The method would be almost identical what I do here, only instead of quartering the fruit and cutting out the core, you’re going to halve it and scoop out the seeds with a metal spoon.

I’ve had my melon baller for ages, but if I were going to buy a new one, I’d go with this kind.  Ya gotta love those ergonomic handles!

Melon in Tea with Mint and Blueberries

Ingredients

  • 1 honeydew melon
  • 6 ounces (170.1 g) fresh blueberries
  • 1 bunch fresh mint
  • 1 cup (236 ml) Pure Leaf Sweet Tea

Instructions
 

  • Cut the melon in half and scoop out the seeds with a metal spoon.  Use a melon baller to cut the melon into small pieces.
  • Place the melon balls in a large bowl, along with the blueberries and mint.
  • Drizzle with Pure Leaf Sweet Tea, and toss to coat.
