We are finally coming out of the rainy season, and I’m looking out to a gorgeous, green, and sunny scene from my window.

This is worth celebrating!

These are baked, so they’re super-simple to make.

I hope you have a donut pan! They’re relatively cheap and easy to find, and they turn out perfect donuts every time. Here’s an affiliate link to the kind I have.

If you really don’t want to use a donut pan, you can also bake these as muffins. Just keep an eye on the bake time because it might be slightly different.

Baked Strawberry Donuts

Ingredients

For the baked strawberry donuts

For the strawberry icing

  • 1 cup (120 g) powdered sugar
  • 1 large fresh strawberry, (or 2 small fresh strawberries), hulled
  • zest of 1/2 a lemon

Instructions
 

  • Preheat the oven to 350° F, and lightly mist a doughnut pan with non-stick spray.
  • Place the flour, baking soda, and salt in a medium mixing bowl and whisk to combine.
  • Place the sour cream, sugar, oil, egg, and vanilla in a small mixing bowl, and whisk to combine.
  • Add the liquid ingredients to the dry, and fold together until just barely combined. Fold in the diced strawberries, and transfer the batter to the prepared pan.
  • Bake for 14 minutes, or until a toothpick inserted in the thickest part of a doughnut comes out clean or with a few moist crumbs. Cool completely.
  • To make the glaze, place the powdered sugar, strawberries, and lemon zest in the chopper attachment of the KitchenAid® 5-Speed Hand Blender and pulse to combine.
  • Top the cooled doughnuts with glaze.
