How’s your week going?  Mine is great!  I’ve finally gotten on top of (most of!) my bloggy obligations (blogligations?) and I was able to have a nice and relaxing weekend with the family.  It was so great!  And now I just have a handful of posts to finish up for this week and next, because after that I will officially be on VACATION!

Not going anywhere particularly exotic, just down the shore for a few days and then to upstate NY to visit family.  But I’m really looking forward to focusing more on my kids, and having a little downtime 😉

Blueberry Lavender Lemonade | Baking a Moment

This drink just gets me primed and ready for that relaxation.  Everything from the pretty soft hue to that soothing hint of lavender…  I just want to lounge in a gently swaying hammock with my eyes closed, one hand behind my head and the other wrapped around a chilled glass of this.

If there is ever a time to enjoy blueberries, that time is RIGHT NOW.  They are at their peak of ripe, juicy, sweet flavor, and because they are in season you can score lots of them for a heck of a lot less $$$ than at any other time of year.  I had the idea to pair them with lavender after seeing this fabulous post from one of my favorite blogs, which I somehow only recently discovered.  Guess I must’ve been living under a rock or something!  Her recipes and photos are so right up my alley.  And she taught me all about what a lovely pairing blueberries + lavender make, and how I can easily shake a drop or two of lavender essential oil into my recipes, for a quick and easy way to infuse that lovely floral essence.

We were at a summer festival over the weekend, and treated ourselves to a tall glass of iced lemonade from one of the booths.  I was so disappointed after the first sip, when I discovered it was made from a powder.  Why???  It’s so easy to make lemonade!  It’s just lemons, water, and sugar!

Blueberry Lavender Simple Syrup | Baking a Moment

In this case, I simmered the water and sugar together with blueberries and a few drops of DoTerra Lavender essential oil (<–not an affiliate link, or sponsored either), for a blueberry lavender simple syrup.  There are lots of ways you can use this, from cocktails to pancakes, but I think you’re really going to love combining it with freshly squeezed lemon juice for a big jug of thirst-quenching summertime relaxation.

Ingredients

For the Blueberry Lavender Lemonade:

  • 1 1/2 cups (354.88 ml) lemon juice , (juice from about 7 lemons)
  • 8 cups (1.89 l) cold water
  • blueberry lavender simple syrup, below

For the Blueberry Lavender Simple Syrup:

To Make the Blueberry Lavender Lemonade:

  • Combine the lemon juice, water, and blueberry lavender simple syrup in a large jug.
  • Serve over ice.

To Make the Blueberry Lavender Simple Syrup:

  • Place the blueberries, sugar, and water in a small pot and bring to a simmer over medium heat.
  • Reduce the heat to low and continue simmering for 5 minutes.
  • Remove from heat and allow to steep until completely cooled. Stir in the lavender essential oil.
