Brown Butter Peach Crumble Ice Cream
If you like peach crumble then you will love this ice cream recipe! Brown butter brings out all the best in the vanilla custard, and compliments the juicy peaches in the most gorgeous way. A sprinkling of cinnamon-spiced streusel adds a bit of crunch and makes this dessert a late-summer dream come true.
Ice cream! With peaches! And brown butter, oooh!
I have been seeing peach recipes everywhere since like June. But up here in the northeast part of the country, the really good peaches don’t come in until late summer. As in, now!
These are local, from Lancaster, and they are huge! And soft and sweet and bursting with juice.
So, since the temps are in the 90’s and so’s the humidity, this seemed like the perfect time for Brown Butter Peach Crumble Ice Cream.
I have been wanting to make brown butter ice cream ever since I first tried it at a local restaurant. If you aren’t already familiar with the magic that is brown butter, boy are you in for a treat. It’s amazing what a little heat can bring out in such a simple ingredient.
Just put the butter in a little pot and let it melt over medium-low heat. Once it’s all melted, it will start to sputter and foam. Just keep a close eye on it. After a while the noise dies down and you can see the color change right before your eyes. Here’s where you want to be sure and time it just right- remove it from the heat when it’s still blonde and you won’t get all the toasty-rich flavor you potentially could, but if you leave it on for even a second too long it could burn. I like to pull it when it gets to be kind of a nutty color.
This goes into my favorite ice cream base, along with the chopped peaches and a little vanilla extract. You will love this ice cream because it’s so rich and creamy! There are some great shortcut recipes out there, but I’m a purist and in my opinion, nothing compares to doing it the old fashioned way. You can really taste the difference when you take your time and do it right!
For a little added texture, we are going to swirl in a crumbly, cinnamon-spiced streusel. I love putting this crumb topping on all sorts of things, from muffins to donuts, even cheesecake! You name it! It’s buttery and crunches a little between your teeth, and it’s got a subtle hint of warm spice. It goes perfectly with the flavors of fresh peach and brown butter!
It just wouldn’t be summer without a deep dish of warm peach crumble, with a big scoop of ice cream on top, right? But with this recipe you get all of it in one delicious frozen treat!

Brown Butter Peach Crumble Ice Cream
Ingredients
- 1/2 cup (113.5 g) unsalted butter, (1 stick)
- 6 large egg yolks
- 2/3 cup (146.67 g) light brown sugar
- 1/4 teaspoon (0.25 teaspoon) kosher salt
- 1 1/2 cups (366 ml) milk
- 1 1/2 cups (357 ml) heavy whipping cream
- 1 1/2 teaspoons (1.5 teaspoons) vanilla extract
- 1 medium peach,, cut into 1/4-inch dice (approximately 1 cup)
- 1 batch (1 batch) cinnamon streusel, recipe follows
For the cinnamon streusel
- 3 tablespoons unsalted butter
- 3/4 cup (93.75 g) all-purpose flour
- 1/3 cup (73.33 g) dark brown sugar
- 1 teaspoon ground cinnamon
- 1/8 teaspoon (0.13 teaspoon) kosher salt
Instructions
- Freeze the canister of an ice cream maker overnight.
- Place the butter in a small pot and cook over medium-low heat until brown and fragrant.
- Place the yolks, brown sugar, and salt in a medium heat-safe bowl and whisk to combine.
- Place the milk, cream, and brown butter in a medium pot and cook over medium-low heat until small bubbles appear around the edges and the liquid is steaming.
- In a thin, slow stream, pour the hot cream mixture into the yolk mixture while whisking.
- Transfer the custard back to the pot and cook on low heat (whisking) until slightly thickened.
- Remove from the heat and stir in the vanilla and peaches.
- Chill the mixture overnight in the refrigerator.
- Place the chilled ice cream base in the prepared ice cream maker, and churn according to the manufacturer's directions.
- Layer the ice cream in a loaf pan, sprinkling in the cinnamon streusel as you go along. Freeze until hard.
To make the cinnamon streusel:
- Place the butter in a small pot over medium-low heat, until melted.
- Stir in the remaining ingredients with a fork, until evenly distributed.

Delicious! I made only the browned butter base itself, to copycat Ben & Jerry’s latest Cherry Crumble flavor (that just has a buttery base, but I wanted to try yours instead), and WOW this recipe is SO good! Next time I’m going to try it with the peaches as you did. I never would have thought of browned butter ice cream, but once you’ve tried it, there’s no going back. I’m surprised it’s not a “thing” yet – or maybe it will be soon!! Thank-you for this great recipe!

Hi Stacy! If you prefer a crunchier texture, you can bake it. Just spread it out on a baking sheet in an even layer. 10 minutes at 350 degrees F should do it!

Question: when you are putting the cooled mixture in the ice cream maker and making according to manufacturer, does that mean add milk to the fill line or just turn on the maker?
I’m not sure how your ice cream maker works, but I’m not familiar with the practice of adding milk. I would just put the mixture in to the frozen canister and churn it for however long you normally would, until it’s the consistency of soft serve.
I had brown butter ice cream last summer at a local place and it has been on my list ever since. I love that you made these. And yes, the peaches are finally making their way up here. Love this great combination.
