Homemade Cinnamon Rolls

Soft, succulent dough with cinnamon brown sugar filling and topped with a gooey cream cheese icing. So. Unbelievably. Delicious.

Yields 6 rolls     adjust servings


For the Rolls

  • 1 cup warm milk
  • 1 packet active dry yeast
  • 1 sticks (1/2 cup) unsalted butter, softened
  • 1/2 cup (plus a pinch for the yeast) granulated sugar
  • 2 eggs
  • 4 cups all-purpose flour
  • 1 teaspoon salt

For the Filling

  • 1 stick (1/2 cup) unsalted butter, softened
  • 1 1/2 cups light brown sugar
  • 2 1/2 teaspoons ground cinnamon

For the Icing

  • 1 stick (1/2 cup) unsalted butter, softened
  • 8 ounces cream cheese, softened
  • 1/2 cup powdered sugar
  • 1 teaspoon vanilla extract



  1. Dissolve the yeast in the warm milk, along with a pinch of sugar, and allow to proof.
  2. Combine the sugar, butter, and eggs. Add the milk and yeast.
  3. Add the flour to the mixture, with the dough hook attachment, and allow to knead for five minutes. Add in the salt.
  4. Place in a buttered bowl and allow to rise, covered, until doubled in size.
  5. Roll out to ΒΌ" thickness, fill, roll, and cut into six equal portions.
  6. Place in a buttered 9-inch diameter pie plate and allow to rise until doubled in size.
  7. Bake at 400 degrees for 10-15 minutes, or until lightly golden. Top with icing.


  1. Smear the rolled dough with soft butter.
  2. Combine the brown sugar and cinnamon and sprinkle evenly over the surface.


  1. Whip all the icing ingredients together until fluffy.
