Hi friends! How is your week going? I’m doing pretty well over here. We made it through the 4-day weekend without my husband. He traveled up to Montreal with his brothers for my youngest brother-in-law’s bachelor party, so it was just me and the little ones for a few days. It wasn’t too terrible being on my own; now that the kids are a bit older it’s a lot easier than it once was. The hardest thing is that my older one CANNOT WAIT for Dad to get home every night so they can throw the ball around in the back yard. It’s just not the same with Mom 🙁

The other thing that I really miss when he’s not around is his cooking. He’s a great cook, and it’s my salvation a lot of nights, after having been in the kitchen all day I’m really kinda burnt out and the idea of making dinner can be overwhelming. But he loves it! It’s his way of decompressing after work, and it’s a really nice break for me.

However, he’s not always the *greatest* at the cleaning up part. Which is really fine because I can actually get into it. He minds the boys for a half hour or so, and I just get into the zone with the dishes. I like to load the dishwasher a certain way, and I’m really meticulous about scrubbing the pots and pans, and when that’s all done, I wipe down the WHOLE kitchen. I get this weird sense of accomplishment and satisfaction when every surface is clear and gleaming, after a long day of mucking it all up. And you want to know the weirdest part? Seeing my kitchen looking like that makes me want to bake even more.

I’m sure if you know me, like, at ALL, then you could have guessed that my favorite hobby is baking. I mean, I do write a baking blog, after all! It really is my most favorite way to spend my free time. I love getting in that beautiful, clean kitchen and just creating. It makes me so happy.

This Nutella crepe cake is the result of just such an occasion. The kids were in the backyard with Dad, and I finished up all the cleaning and just felt inspired to start tinkering around. I pulled out an old cookbook and started practicing my crepe-making skills. Making crepes is not hard, after the first 2 or 3 you get the hang of it and it becomes almost meditative.

Before long, I had a huge stack, and I decided to fill in between each one with a smear of Nutella. Omg, so good! Such a treat. We all loved the way the sweet Nutella was balanced by the eggy crepes, and the tart, juicy raspberries were such a pretty garnish!

Instructions
 

  • Heat a 6-inch diameter skillet over medium-high heat.
  • Place the eggs, milk, flour, oil, and salt in a blender, and mix on low speed until fully combined.
  • Lightly mist the skillet with non-stick spray and pour about 2 tablespoons of the crepe batter in, swirling to coat the bottom of the pan. Cook for about 1-2 minutes, or until golden on the bottom. Invert over a paper towel and repeat.
  • When the crepes are completely cool, spread with a thin layer of Nutella and stack.
  • Garnish with raspberries and powdered sugar. Serve immediately.
