Good morning everyone!  Is your week off to a good start?  How was your Father’s Day?

I’m fresh off a weekend at the shore with Mr. Allie’s family.  Going to the shore is Mr. Allie’s favorite thing in all the land, so we packed everybody up early Friday afternoon and headed down.  I really wanted to do my best to make him feel loved and appreciated, because he always does such a good job with that for me when it’s Mother’s Day.  I had been thinking about Father’s Day for months, picked up a few thoughtful gifts while on my travels, and made sure to have nice cards both from me and from the kiddos.

Friday evening was the usual mad dash to beat the traffic and get down there at a decent time before the lines at the restaurants were too long, or the kids were too hangry.  Then we headed back to my FIL’s to make up the beds and get our boys to sleep.  Next morning was a pancake breakfast at Mr. Allie’s favorite joint and then a marathon beach day.  I swear he could spend days on the beach.  Unlike myself (who always suffers a nasty burn no matter what kind of precautions I take; this weekend being no exception), he’s got thick skin that tans beautifully.  After our dinner out, we flopped into bed like we hadn’t slept in days.

So, Sunday morning rolls around and everyone is bustling around, getting ready for the big brunch with all the extended friends and family.  Mr. Allie was off running errands when I woke up so I just got right into it and started getting myself and the kids ready.  He strolled in an hour or so later, just in time to take a quick shower before it was nearly time to pile into the car and head to the party.  Suddenly I realized we still hadn’t given him his gifts, and no sooner did I jump up to do that when he reminded me that I hadn’t even wished him a happy Father’s Day yet!  Yikes.  I felt like a total boob.  I was really kicking myself because after all the thought and care I had put into making the weekend special, I pretty much forgot the most simple and important thing.  Have you ever done anything like that?

Well, hopefully all the fun he ended up having made up for it.  There were lots of quoit games and catches, walks on the beach, delicious food and drink, and family time with his dad, brother, and our boys.

I teased you a while back about having a fun summer s’mores treat on the way and here it finally is.  Do you remember when I mentioned about the s’mores frappuccino I grabbed a few weeks back?  What an incredible combination of flavors, but boy, it’ll give you cavities!  If you’re anything like me you probably prefer your desserts to be not quite so intensely sugar-y.  It’s kinda nice when you can actually make out some flavors in there!

Up until pretty recently, I always shied away from granita recipes because the thought of having to scrape with a fork every hour sounded like a huge pain in the neck.  Then I discovered a great trick.  It was Eric from Happy Valley Chow who taught me that a granita can be made in seconds with nothing more than a food processor fitted with a grating blade.  I’m talking about the same blade you would use to shred cheese.  You can actually freeze your granita solid, in a pan or whatever, until it’s like a legit block of ice.  I’m talking stick it in the freezer and forget about it for days.  Then, just before you’re ready to serve it, pop it out of the pan (it helps if you wrap it in a hot towel), cut it into chunks, and process it.  It takes less than five minutes and it’s spectacularly noisy but it yields the fluffiest, most flavorful snow-like dessert treat.

Drizzle your serving glasses with marshmallow sauce and chocolate syrup, spoon in the coffee granita, and top with fresh whipped cream and graham cracker crumbs.  So light and refreshing, and just as sweet or strong as you like it!

S'mores Frappuccino Granita

This S'mores Frappuccino Granita couldn't be easier to make or more refreshing! There's no need to scrape, and you can make the coffee ice just as sweet or strong as you like. Garnish with marshmallow and chocolate sauce, a dollop of fresh whipped cream, and some graham cracker crumbs, and you have a sweet summer pick me up that can't be beat!

Ingredients

  • 16 ounces (453.59 ml) brewed coffee or espresso, (2 cups), sweetened to taste
  • 2 tablespoons marshmallow sauce
  • 2 tablespoons chocolate syrup
  • 1/2 cup (119 ml) heavy cream,, whipped to soft peaks with 1 tablespoon granulated sugar
  • 2 graham crackers,, crushed

Instructions
 

  • Pour the coffee into a square baking dish, cover tightly, and freeze overnight or until solid.  
  • Turn the frozen coffee out onto a cutting board (you may need to wrap it in a hot towel), and chop into a few pieces. 
  • Feed the pieces into a food processor fitted with a grating blade.
  • Drizzle the marshmallow sauce and chocolate syrup into the serving glasses.  Lightly spoon the coffee granita over, and top with whipped cream and graham cracker crumbs.
