Welcome back from Thanksgiving break!

I hope it was a good one!

It was for me, and much needed. It felt so good to kick back a little and just enjoy time with family. I even got a jump on some of the holiday decorating and shopping!

Since it’s November (almost December) I’m really in the comfort food mood. Something about those blustery gray skies, dry leaves, and chilly temps just makes me crave foods that are warm and soft. Like a big hug.

This snickerdoodle apple cobbler has been keeping us warm for the last few days.

The filling is made with Granny Smith apples, which are my absolute favorite for baking. I love their tart, extra-apple-y flavor, and they’re firm so they hold up really well for baking, without turning to mush. With a little butter, sugar, and cinnamon, they’re just like a bowl of pure fall!

And is there anything better than a snickerdoodle cookie at this time of year? Puffy and soft in the middle, with just the right amount of crisp on the edges. This cobbler is literally covered in them! With their buttery taste and cinnamon-sugar coating, they’re the perfect compliment to warm baked apples.

I got the idea to make this snickerdoodle apple cobbler after flipping through a recent issue of Better Homes & Gardens magazine. They had all sorts of baked cobblers, buckles, and crisps, with unusual toppings like oatmeal cookie or pound cake. Why not?? I thought it was a fabulous idea and wanted to put my own spin on it for you.

  • 2 teaspoons ground cinnamon
  • 2 tablespoons lemon juice, (from one lemon)
  • 1/8 teaspoon (0.13 teaspoon) kosher salt
  • 1 cup (250 g) water
