2016 what???  Yes I am a little behind.

Thanks for the break you guys!  I took almost three weeks off and it was magical.  Just what I needed to get the house in order, spend lots of time with the fam, and get re-inspired with lots of fun recipe ideas for the new year.  I hope you all had a fantastic holiday season, and more on all that tomorrow!

For now, I’m starting things off with a lovely breakfast that will energize you and make you feel all warm and sunshine-y inside.

Winter is tough, am I right?  I mean besides freezing our tatas off, there’s not a whole lot to choose from in the fresh, locally-grown seasonal fruit department.  During the rest of the year, I like to plan my recipes around that, but in the winter you really can’t.  At least not in the northeastern part of the U.S.  So let’s give ourselves a break, and a delicious one at that.  We’re using gorgeous tropical fruits in this smoothie bowl, and it’s such a treat!

Tropical Green Smoothie Bowl

Start your day off right with this Tropical Green Smoothie Bowl! Full of sweet and juicy fresh fruits, seeds, protein, and a special secret ingredient to put a little added spring in your step!

Ingredients

  • 4 ounces (113.4 ml) cold water
  • 3 pitted dates
  • 2 tablespoons rolled oats
  • 1/4 cup (50 g) plain Greek yogurt
  • 1 cup (40 g) greens , (such as kale or spinach)
  • 1 fresh clementine orange,, peeled
  • 1 cup (165 g) frozen mango chunks
  • 1 cup (566 g) frozen pineapple chunks
  • 1 teaspoon freshly grated ginger
  • 10 thin slices of fresh pineapple
  • 1 fresh oranges,, sliced
  • 1 tablespoon shredded coconut
  • 1 teaspoon chia seeds

Instructions
 

  • Place the water, dates, and oats in the blender, and allow to soak for 15-20 minutes.
  • Add the Greek yogurt, greens, orange, frozen mango, frozen pineapple, and ginger, and blend until smooth. 
  • Pour the mixture into a shallow bowl and garnish with pineapple slices, orange slices, coconut, and chia seeds.
