Triple Layer Coconut Cake

A triple layer beauty, filled with a fluffy marshmallow frosting, and topped with mounds of coconut!

Flour

Sugar

Baking Powder

Coconut Milk

Oil

Egg Whties

Salt

Marshmallow Frosting

Shredded Coconut

Ingredients:

Step 1

Combine flour, sugar, baking powder, and salt in large mixing bowl.

Step 2

Whisk together coconut milk, oil, egg whites, and coconut extract in medium mixing bowl.

Step 3

Pour wet ingredients into bowl with dry ingredients.

Step 4

Whisk together until smooth.

Step 5

Divide the batter evenly  among three cake pans.  Bake for 30-45 minutes  at 350 F.

Step 6

Allow cakes to cool before frosting with marshmallow frosting.

Step 7

Gently press coconut shreds onto the outside of the cake.
