Irish  Oat Cookies

Crispy and buttery cookies with a brown sugar and hearty oat flavor.

1 cup of butter

3/4 cup brown sugar

2 egg yolks

1 1/2 cups all purpose flour

Ingredients:

1/2 tsp baking soda

1 cup old fashioned oats

2 large eggs

Step 1

Place the butter and brown sugar in a large mixing bowl, and beat together until smooth.

Step 2

Mix in the egg yolks until combined.

Step 3

Add the flour, oats, baking soda, and salt, mixing together until just barely combined.

Step 4

Drop balls of dough on the prepared baking sheets, allowing room in between for spreading.

Step 5

Bake the oat cookies for 14 to 16 minutes, or until golden brown around the edges and crisp. Cool before serving.
