Fluffy Chocolate  Chip Pancakes

Ingredients:

All Purpose Flour Granulated Sugar Baking Powder Baking Soda Kosher Salt Mini Chocolate Chips Unsalted Butter Buttermilk Eggs Vanilla Extract

Fluffy Chocolate Chip Pancakes

 50 minutes

Step 1

Place the flour, sugar, baking powder, baking soda, and salt in a large bowl and whisk to combine.

Step 2

 Add the mini chocolate chips.

Step 3

Whisk the melted butter, buttermilk, egg yolks, and vanilla together, then add the liquid mixture to the bowl with the dry ingredients.

Step 4

Pour into flour. Fold together (just a few strokes) until a few streaks of flour remain.

Step 5

Whip the egg whites to stiff peaks, then fold them gently into the batter.

Step 6

Scoop 1/4 cup of batter. 

Step 7

Drop the batter onto the greased, preheated skillet.

Step 8

Cook until the edges  set, and small bubbles  pop towards the center. Flip the and continue to cook until they are golden brown on both sides.
