3 eggs 3 egg yolks 1/2 cup granulated sugar 1/2 cup lemon juice 1/2 cup unsalted butter
Place the eggs, yolks, sugar, and lemon juice in a medium mixing bowl and whisk to combine.
Place the bowl over a pot of simmering water, and add the butter.
Cook, whisking continuously, until thickened.
Place a fine mesh strainer over a heat-safe bowl, and pour the mixture through.
Press waxed paper directly onto the surface of the curd (to prevent a skin from forming), and refrigerate.
