Ingredients:

Chocolate  Cream

Pie Crust Granulated Sugar All-Purpose Flour Corn Starch Salt Eggs Lemon Juice Egg Whites Cream of Tartar Vanilla Extract

Place the sugar, flour, cornstarch, and salt in a large bowl, and whisk to combine.

Step 1

Whisk in the eggs and egg yolks until smooth.

Step 2

Whisk in the lemon juice until combined, then transfer the filling to the partially baked pie crust and bake for 38 to 42 minutes.

Step 3

Place the egg whites, cream of tartar, and salt in a large mixing bowl and whip on medium speed until the meringue can hold soft peaks.

Step 4

Mix the sugar and cornstarch together in a small bowl. With the mixer still running, add in the sugar/cornstarch mixture in a very slow, steady stream.

Turn the mixer up to high speed and whip until the meringue is very stiff.

Stir in the vanilla extract, and scoop the meringue on top of the warm pie.

Step 7

Use a spatula to spread the meringue out to the edges of the crust, and to create swirls.

Toast the meringue for a few minutes under the broiler.
