Roast sweet potatoes for 75 minutes.

Step 1

Place a sheet of parchment over the prepared pie shell and top it with ceramic pie weights. Bake for 20 minutes.

Step 2

Whip the cooked sweet potatoes with butter until smooth.

Step 3

Blend in the eggs, one at a time.

Step 4

Add the brown sugar, cinnamon, vanilla, ginger, nutmeg, and salt.

Step 5

Stir in the cream, and transfer the filling to the partially-baked pie crust.

Step 6

Bake for 15 minutes at 425 degrees F, then lower the temp to 350 degrees F and bake for 40-60 minutes.
