- 2 1/2 cups unsalted butter, softened
- 3 cups granulated sugar
- 6 large eggs
- 2 teaspoons lemon extract
- 1/4 cup lemon juice (from about 2 lemons)
- 2 tablespoons lemon zest
- 3 cups cake flour
- 2 teaspoons kosher salt
- 1 tablespoon powdered sugar (for garnish)
Preheat the oven to 350 degrees F, generously mist a 10-cup bundt pan with non-stick spray, and dust with flour.
In a large bowl with an electric mixer, cream the butter and sugar together on medium-high speed until pale and fluffy (about 5 minutes).
Beat in the eggs, one at a time, until incorporated.
