For the Perfectly Chocolate Cake:

  • Preheat oven to 350 degrees.
  • Grease and line (3) 6-inch round cake pans with parchment.
  • Combine first six ingredients in a large bowl.
  • Add eggs, milk, oil, and vanilla; beat on medium speed for two mins.
  • Stir in boiling water (batter will be thin).
  • Pour into pans and bake 25-30 mins or until cake bounces back and a toothpick inserted in the center comes out clean.
  • Cool 10 mins; remove from pans to wire racks.

For the Perfectly Chocolate Frosting:

  • Melt butter.
  • Stir in cocoa.
  • Alternately add powdered sugar and milk, beating on medium speed to spreading consistency. Add more milk, if needed.
  • Stir in vanilla.
  • Makes about 4 cups.
