  • 3 eggs (large)
  • 3 egg yolks (large)
  • 1/2 cup granulated sugar
  • 1/2 cup lemon juice (juice of 2 lemons)
  • 1/2 cup unsalted butter (1 stick), cut into small pieces
  1. Place the eggs, yolks, sugar, and lemon juice in a medium mixing bowl and whisk to combine.
  2. Place the bowl over a pot of simmering water, and add the butter.
  3. Cook, whisking continuously, until thickened. (The mixture should be about the consistency of yogurt. It will continue to thicken as it cools.)

  4. Place a fine mesh strainer over a heat-safe bowl, and pour the mixture through.
  5. Press waxed paper or plastic wrap directly onto the surface of the curd (to prevent a skin from forming), and refrigerate.
