Frosted Vanilla Cookie Scones

Treat yourself to a frosted vanilla cookie, in breakfast form! These scones are light and moist, and bursting with sweet vanilla flavor. So delicious with coffee- and perfect for a holiday brunch!

For the Glaze

  • 1 cup powdered sugar
  • 2 tablespoons BAILEYS™ Coffee Creamer Frosted Vanilla Cookie
  • colorful sparkling sugar/sprinkles for garnish

Instructions

To Make the Scones:

  • Preheat the oven to 375 degrees F, and line a baking sheet with parchment.
  • Place the flour, sugar, baking powder, and salt in a large bowl and whisk to combine.  Using a pastry blender, two knives, or your fingers, cut in the cold butter until the mixture resembles coarse meal.
  • Combine the BAILEYS™ Coffee Creamer Frosted Vanilla Cookie and egg together in a separate bowl. 
  • Pour the mixture into the dry ingredients, and stir to combine. 
  • When the dough forms a ball and pulls away cleanly from the sides of the bowl, transfer it to the prepared baking sheet. 
  • Pat the dough down into a disc about 2 inches high. 
  • Using a large chef's knife or dough scraper, score the dough into 6 equal triangles. 
  • Bake for 20-24 minutes, or until golden brown around the bottom edges. 
  • Top with glaze and garnish.

To Make the Glaze:

  • Place the powdered sugar in a small bowl and stir in the BAILEYS™ Coffee Creamer Frosted Vanilla Cookie. 
  • Drizzle the glaze over the baked scones, and garnish with festive sugars/sprinkles.
