For the pumpkin spice simple syrup
For the pumpkin spice latte martini
- 1 tablespoon honey (for rimming the glass)
- 1 tablespoon cinnamon sugar (for rimming the glass)
- 4 ounces vodka
- 3 ounces brewed espresso
- 1/4 cup pure pumpkin puree
- 2 ounces coffee liqueur
- 2 ounces white chocolate liqueur
- 3 tablespoons pumpkin spice simple syrup
To make the pumpkin spice simple syrup
Place the water and sugar in a small pot.
Add the cinnamon stick, fresh ginger, nutmeg, and cloves, and heat the mixture over medium-low heat until the sugar has completely dissolved.
Transfer to a small jar. The longer it sits, the better it gets!
To make the pumpkin spice latte martini
Place the honey on a saucer.
Place the cinnamon sugar on another saucer.
Dip the rim of a martini glass first in the syrup, then in the cinnamon sugar to coat. Set aside.
Place the vodka, espresso, pumpkin, Kahlua, white chocolate liqueur, and pumpkin spice simple syrup in a cocktail shaker, and top with ice.
Shake until very cold and frothy.
Pour into the prepared glass and serve.
