Chocolate Amaretto Torte

This cake will absolutely melt in your mouth! The chocolate flavor is so rich, and the sweet amaretto is an awesome compliment. Make this showstopping torte for your next big occasion!

  • Combine the amaretto and dried cherries and let soak for 30 minutes to plump.
  • Preheat the oven to 350 degrees F and mist a 9-inch cake pan with non-stick spray.  Line with a circle of parchment.
  • Place the chocolate and butter in a large bowl and melt (over a double boiler or in the microwave).  Stir together until smooth.
  • Beat the egg yolks and sugar together on medium-high speed until pale and thick.  Stir in the cherries & amaretto, almond meal, flour, vanilla, and almond extract, salt, and chocolate mixture.
  • Whip the egg whites in a separate bowl until they form stiff peaks.
  • Fold the egg whites into the chocolate mixture and transfer the batter into the prepared pan.
  • Bake for 40-45 minutes, or until the cake is just set (it will still be moist in the center).  Cool for 30 minutes, then flip it out of the pan and finish cooling on a wire rack.
  • Top with cocoa dusted almonds and powdered sugar, slice, and serve.
