Make the Tart Shells
  1. Preheat the oven to 375 degrees F.
  2. Roll the cookie dough to a thickness of ¼ inch.

  3. Cut with a 3 inch diameter blossom cookie cutter, and carefully place over the back of a mini muffin tin.

  4. Bake for 10 minutes.
Make the Topping:
  1. Whip the cream until stiff peaks form.
  2. Add in the sugar and vanilla.
  3. Whip in the soft cream cheese until completely incorporated.
Assemble the Tartlets:
  1. Fill each tart shell with about a tablespoon of caramel.

  2. Top with cheesecake topping.
  3. Garnish with chocolate vermicelli.
