Blackberry Buttermilk Popsicles
Blackberry compote and sweet buttermilk swirl together to form a refreshing frozen summer treat! A quick dip in homemade chocolate magic shell gives a deep, rich contrast to these fruity popsicles.

For the Buttermilk Layer:
For the Blackberry Layer:
- 1 cup fresh blackberries
- 2 teaspoons granulated sugar
- 1 1/2 teaspoons cornstarch
- 1 tablespoon water
- 1 1/2 teaspoons lemon zest (zest of half a lemon)
To Make the Buttermilk Mixture:
In a small pot, gently warm the buttermilk and sugar, until the sugar has completely dissolved.
Whisk in the vanilla bean paste until combined, and chill until completely cooled (about one hour).
To Make the Blackberry Mixture:
In a small pot, toss the blackberries with the sugar and cornstarch, until evenly coated.
Add the water and simmer over medium-low heat, until the mixture is thickened, but large chunks of fruit still remain.
Fold in the lemon zest and chill until completely cooled (about one hour).
To Assemble the Popsicles:
Fill popsicle molds, alternating layers of the buttermilk mixture with the blackberry mixture, and chill in the freezer overnight, or until solid.
Dip frozen popsicles in magic shell, and enjoy!
