Potato Skins

These potato skins are just like you'd get in a restaurant, but better! Loaded with melted cheese, bacon, sour cream, & green onions.

Ingredients

  • 4 russet potatoes
  • 3 tablespoons oil (approx.)
  • 2 teaspoons kosher salt
  • 2 cups shredded cheddar cheese
  • 5 slices bacon, cooked & crumbled
  • 1 cup sour cream
  • 1 bunch scallions, sliced

Instructions

  • Pierce the potatoes several times with a fork and bake them in a preheated, 400 degree F oven until soft (approx. 1 1/2 to 2 hours).
  • When the potatoes are cool enough to handle, slice them in half lengthwise and scoop out the middles, leaving a 1/4-inch wall around the outside edge and bottom.
  • Brush the potato skins with oil (outside and inside) and season with salt, then bake in a preheated 400 degree F oven until crispy and browned around the outside edge (approx. 15 to 20 minutes).
  • Fill the potato skins with cheese and place back in the oven until melted & gooey (approx. 5 to 10 minutes).
  • Sprinkle with crumbled bacon, top with sour cream, and garnish with green onions.
