  1. Preheat the oven to 350 degrees F, line a 9-inch springform pan with parchment, and mist it lightly with non-stick spray.

  2. Break up the chocolate into small pieces and place it in a medium bowl, along with the butter and salt.

  3. Melt the mixture in a microwave* in 30-second increments (stirring after each), until smooth.

  4. Whip the egg whites until they hold stiff peaks, then transfer to another bowl & set aside.

  5. Place the egg yolks and sugar in the bowl and whip on high speed for 5 minutes, or until very pale and fluffy.

  6. Fold the chocolate mixture into the egg yolk mixture.

  7. Fold in the whipped egg whites, transfer the batter to the prepared pan, and bake until set around the edges but still a bit wobbly towards the center (approx. 55 to 65 minutes).

  8. Cool completely before removing the sides of the pan and cutting into slices.
