Homemade Cherry Pie

Place the cherries, sugar, cornstarch, lemon juice, and salt in a large pot and toss to coat.

Step 1

Cook the cherry mixture over low heat until the juices have thickened. Transfer to a glass bowl.

Step 2

Stir in the almond extract, and allow it to cool completely.

Step 3

Spoon cherry mixture into the chilled bottom crust, then dot the top with butter.

Step 4

Cut top pie crust into strips. Arrange the strips over the filling in a lattice pattern. Chill for 15 minutes.

Step 5

Brush the top crust with egg wash and sprinkle with coarse sugar. Bake for 45 minutes at 425 F.
