Split the vanilla bean with a sharp knife, scrape the seeds out.

Step 1

Place the seeds and the pod in the pot with the cream.1. Heat the cream over low heat.

Step 2

Add egg yolks to a bowl.

Step 3

Whisk the yolks, sugar, and salt together in a medium bowl.

Step 4

When the cream is hot and steamy, dribble it into the yolk mixture in a slow stream while whisking. Transfer to small dishes.

Step 5

Place unbaked creme brulee in large baking dish, and fill the larger dish with very hot water until it reaches about halfway up the creme brulee dishes.

Step 6

Bake for 30 to 40 minutes, Chill for 2 hours.

Step 7

Sprinkle about a tablespoon of granulated sugar over the tops of each creme brulee, then caramelize with a brulee torch.
