Russet Potatoes Oil Kosher Salt Shredded Cheese Bacon Sour Cream Scallions

Pierce potatoes, and bake in the oven.
Slice them in half lengthwise and scoop out the middles, leaving a 1/4-inch wall around the outside edge and bottom.
Brush the potato skins with oil (outside and inside) and season with salt, then bake again.
Fill the potato skins with cheese and place back in the oven until melted & gooey.
Sprinkle with crumbled bacon, top with sour cream, and garnish with green onions.
