Ingredients

  • 3 tablespoons granulated sugar
  • 1 teaspoon kosher salt
  • 2 ¼ teaspoons instant yeast
  • 2 cups bread flour
  • 1 ½ cups all-purpose flour (you may need slightly more or less all-purpose flour)
  • 1 cup milk (preferably whole) warm (105-110 degrees F)
  • 5 tablespoons unsalted butter melted
  • 1 egg large, lightly beaten
  • 1 tablespoon milk (preferably whole) for brushing

Instructions

  • In the bowl of a stand mixer, whisk together the sugar, salt, yeast, bread flour, and 1 ½ cups all-purpose flour.
  • With the machine running on medium-low speed, slowly add the milk, butter and egg using the dough hook attachment.
  • Slowly add in as much of the remaining all-purpose flour as needed until the dough is slightly moist but not sticky.
  • Knead the dough on medium speed for 7-8 minutes until smooth.
  • Transfer the dough to a lightly oiled bowl and cover it loosely.
  • Let rise in a warm place until doubled in size (approx. 1 - 1 ½ hours, or 30 minutes with fast-acting instant yeast).
  • Punch down the dough, knead briefly, cover, and refrigerate for 30 minutes.
  • Form into a loaf, then place in a greased 9x5-inch loaf pan.
  • Cover loosely with plastic wrap and let rise until doubled in size (approx. 1 - 1 ½ hours, or 30 minutes with fast-acting instant yeast).
  • Preheat the oven to 375 F, brush the top of the loaf with milk, then bake for 35-40 minutes, or until the top is golden.
  • Cool on a wire rack before slicing.
