- 2 1/2 cups blueberries
- 6 slices whole wheat bread
- 1/2 cup granulated sugar, or to taste
- 4 tablespoons unsalted butter (1/2 stick)
- 1 tablespoon lemon juice (juice of half a lemon)
- 1 1/2 teaspoons lemon zest (zest of half a lemon)
- 1/8 teaspoon kosher salt
Tear the bread into randomly sized pieces, place in a mixing bowl, or the crock of a slow cooker, along with remaining ingredients, and toss.
Cook in a slow cooker to desired doneness or, transfer to an oven-safe baking dish and bake for 45 minutes at 350 degrees, or until the top is just beginning to brown.
Serve warm, cold, or room temperature, with a scoop of vanilla ice cream (optional).
