  1. Pheat the oven to 350 degrees F and line baking sheets with parchment paper.

  2. Place the butter, granulated sugar, and vanilla in a large mixing bowl and cream together on medium-high speed until very pale and fluffy (about 5 to 7 minutes).

  3. Stir in the flour, ground nuts, and salt until just combined.

  4. Using a 1.5-tablespoon scoop, portion the dough into balls and roll in powdered sugar to coat.

  6. When cool enough to handle, roll the cookies in powdered sugar a second time.
