Melting moments are also known as cornstarch cookies or butter cookies. They have a buttery, soft and crumbly texture. Similar to a shortbread cookie, but more delicate with a lighter texture. This egg free cookie recipe truly melts in your mouth!

We love these cookies just as they are, but feel free to add a little frosting on top or sandwich some buttercream or ganache between two cookies. You really can’t go wrong!

How To Make Melting Moments Cookies

Preheat the oven to 350°F and prepare two baking sheet pans with parchment paper.

Step 1: In a stand mixer or with a hand held mixer, beat the butter and salt together on medium until light and creamy.  Scrape the bowl and add the vanilla.

Step 2: Scrape the bowl and sift in the powdered sugar, cornstarch and all-purpose flour.

Step 3: Use the mixer on low speed until the dough comes together. It is a soft dough.

Step 4: Use tablespoon size scoops of dough and roll them into balls.  Place the dough balls on the prepared pans. Use your fingers to sprinkle a little powdered sugar over the top of each dough ball and then use a fork to press fork marks onto the top of each cookie.

Remove the pan from the oven and allow the cookies to cool on the pan for 10 minutes, then move to a cooling rack and dust the top of each cookie with more powdered sugar.

Tips For Making Delicate Cookies

  • If the dough seems too soft to work with, let the cookie dough chill in the refrigerator for 30 minutes.
  • Dust the tops of the cookie dough balls with a little powdered sugar so the fork doesn’t stick to the dough.
  • Allow the cookies to cool on the pan for 10 minutes, then move to a wire cooling rack with a spatula as they are delicate.
  • If the dusting of powdered sugar over the slightly cooled baked cookies melts into the cookies, feel free to dust with a little more once they have cooled completely.

FAQ

Can I use other flavors?

Yes! Lemon would be a fantastic flavor for spring and peppermint would be perfect for Christmas. I would start with 1/2 teaspoon of extract and adjust to your own taste.

Could I ship these cookies in a Christmas cookie box?

These melting moments cookies have a delicate, buttery texture, which makes them great for eating, but not so good for shipping.

  • In a stand mixer or with a hand held mixer, beat the butter and salt together on medium until light and creamy, about 2 minutes. Scrape the bowl and add the vanilla and beat in another 30-60 seconds.
  • Scrape the bowl and sift in the powdered sugar, cornstarch and all-purpose flour. Use the mixer on low speed until the dough comes together.
  • Use tablespoon size scoops of dough and roll them into balls (mine were 15g each). Place the dough balls on the prepared pans (I fit 15-16 cookies per half sheet pan). Use your fingers to sprinkle a little powdered sugar over the top of each dough ball and then use a fork to press fork marks onto the top of each cookie.
  • Bake in the preheated oven for 10-12 minutes until barely browned at the edges.
  • Remove the pan from the oven and allow the cookies to cool on the pan for 10 minutes, then move to a cooling rack and dust the top of each cookie with more powdered sugar. Allow to cool completely.

Notes

If the dough feels too soft to roll into balls, refrigerate it for 30 minutes.
Store in an airtight container at room temperature for up to 5 days or freeze in an airtight container for up to 3 months.
