Healthier Chocolate Snacking Cake and Rock the Lunchbox

Hey guys! How’s your week going? It’s Wednesday and I couldn’t be more excited because some of my best bloggy friends will be arriving in just a day or so, to hang with me and my boys and head up to the Big Harvest Potluck, right here in the Philadelphia area! I’m totally psyched to check out this fun event, meet lots of new people I have tons in common with, and learn!
But before I do that, I have to share this cake with you.
Dude. I know it says “Healthier,” up there, but this is really good schtuff. Trust me. I cannot tell a lie when it comes to dessert.
I used my favorite cupcake recipe as a starting point, so you know it’s super moist and full of dark chocolate flavor. But I really wanted to make it healthier by adding in a little whole grain, some healthier fats, and a bit less refined sugar. It took a couple tries to get it tasting up-to-snuff, but man, when I got it, I GOT IT! My hubby and kids obliterated it before I even had a chance to snap the pics, so I had to make it all over again. But it’s all good because the recipe’s so quick and easy; it all happens in mere minutes with just one bowl and a couple of measuring cups and spoons to wash.
That little sprinkling of mini chocolate chips and powdered sugar on top just drew them right in. Like moths to a flame, lol! And I really felt good about letting them have it, knowing it was full of good-for-them ingredients like whole wheat flour, Greek yogurt, and applesauce.

My 7-year old helped me out with this post by drawing me a pic of his “dream lunch.” Not too bad, but I figured I could make it even healthier with a few choice picks from the Rock the Lunchbox family. And this healthier chocolate snacking cake ends the meal on a high note!
He loved it! All yummy noms, and I felt really good about feeding it to him, knowing all the ingredients were so wholesome and organic.

Healthier Chocolate Snacking Cake
Ingredients
- 1/2 cup (62.5 g) cake flour
- 1/2 cup (43 g) unsweetened cocoa powder
- 1/2 cup (100 g) granulated sugar
- 1/4 cup (30 g) whole wheat pastry flour
- 3/4 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon kosher salt
- 6 tablespoons (88.72 g) coconut oil
- 2 eggs, (large)
- 1/2 cup (100 g) Greek yogurt
- 1/2 cup (122 g) applesauce
- 1/3 cup (78.86 ml) pure maple syrup
- 1 teaspoon vanilla extract
- 1/4 cup (45 g) mini chocolate chips, (optional), for garnish
- 1 tablespoon powdered sugar, (optional), for garnish
Instructions
- Preheat the oven to 325 degrees F and lightly mist an 8x8 pan with non-stick spray.
- Place the flours, cocoa, sugar, baking soda, baking powder, and salt in a large mixing bowl and stir to combine.
- Add the coconut oil, and stir on low speed until the mixture resembles damp sand.
- Add the eggs, one at a time, and beat until incorporated.
- Scrape the bottom and sides of the bowl with a silicone spatula, and add the Greek yogurt, applesauce, and vanilla extract.
- Mix on low speed for about a minute, to aerate the batter and develop the structure of the cake.
- Pour in the maple syrup and stir just until combined.
- Bake for 30 minutes or until a tester comes out clean or with a few moist crumbs.
- Sprinkle mini chocolate chips on the warm cake, for garnish.
- Allow to cool completely, then dust with powdered sugar.

I’m in the midst of making this yummy looking cake and realized there’s no baking temp or pan size (unless I’m missing it). I’m gonna go with the usual 350 and from your pics it looks like 8×8? pan. I’m sure it’ll turn out delish regardless but thought I’d ask. Thanks for all your wonderful recipes. Love following your blog.
