Red Velvet Cookie Dough Truffles

It was a last-minute idea to post this, but I really think it works to our advantage because that makes them perfect for anyone who is short on time but just needs a fun little project for edible gift-giving 😉
Remember the other day when I was telling you all about my glamorous lifestyle and purchasing flushable wipes et al at Walmart? Well, I also picked up a few other items that day.
Namely, marshmallows, cream cheese, coconut, and chocolate.
Of course. Chocolate is always on the list. They had pretty much all of it in one convenient place. It’s like they know me.
On Sunday afternoon (while the hubs was watching football) I mixed a few simple ingredients into an easy edible (no egg) cookie dough with all the flavors of our favorite red velvet cake. Cocoa powder was there, and so was buttermilk, and cream cheese and butter, all the usual suspects.
After chilling the dough for a bit, my littles and I got our hands into it. They loved smooshing it around and sneaking nibbles here and there. It’s like play-doh to them.
We rolled the balls into a teardrop shape and then topped each one with half a mini-marshmallow. If you cut the marshmallow in half with scissors, it gives you a sticky side that will adhere nicely to the top of the truffle.
Then just chill them in the fridge for a bit, until they’re firm.
To give them some furry trim you just dip their feet in melted white chocolate and then press into the coconut flakes. Tah-dah! Santa hats.
These are so much fun, and they make a really cute homemade gift. You can find tins and boxes (like the one I’m picturing below) all over the place at this time of year and they are perfect for packaging up homemade treats. Add some fun mini-cupcake liners, a bit of ribbon or twine, and a pretty gift tag and you’ve got a truly thoughtful gift that cost next to nothing. Not to mention a fun afternoon of making holiday memories with your loved ones!

Red Velvet Cookie Dough Truffles
Ingredients
- 1/4 cup (56.75 g) unsalted butter, (4 tablespoons), softened
- 4 ounces (113.4 g) cream cheese, (1/2 a brick), softened
- 1 cup (200 g) granulated sugar
- 2 1/2 cups (312.5 g) all-purpose flour
- 1/3 cup (28.67 g) unsweetened cocoa powder
- 4 teaspoons red food coloring, (liquid)
- 2 teaspoons buttermilk
- 1 teaspoon vanilla extract
- 1/4 cup (18.75 g) mini marshmallows
- 3 ounces (85.05 g) white chocolate,, chopped
- 1/2 cup (45 g) sweetened shredded coconut
Instructions
- Place the butter, cream cheese, and sugar in a large mixing bowl and beat until pale and fluffy.
- Add the flour and cocoa, and mix until blended.
- Stir in the red food coloring, buttermilk, and vanilla, and refrigerate the dough for about 1 hour.
- Roll about a tablespoon of dough into a ball and shape into a teardrop. Cut a mini marshmallow in half with scissors, and place the cut end of the marshmallow on the tippy top of the teardrop. Place the cookie dough truffles on a parchment-lined baking sheet and refrigerate.
- Place the white chocolate in a small bowl and microwave for 30 seconds at 100% power. Stir. Microwave for another 20 seconds, or until just a few lumps remain. Stir the white chocolate until smooth.
- Place the coconut on a small plate. Dip the bottom of each truffle into the melted white chocolate, and then immediately into the coconut. Place on a parchment-lined baking sheet and chill until the white chocolate is set.
These are adorable!! Those little santa hats! I can’t get over it! And red velvet is always a good thing in my book!
