Chile mocha shortbread cookies! Aren’t these just the cutest? I love the fluted heart shape, and that sprinkling of red-hot sugar.
You may remember a couple months ago I posted a tutorial on how to make a chile mocha at home. Did you like that one? I am a huge fan of the Starbucks Chile Mocha drink. I love the combination of rich coffee and chocolate, and the little hint of cinnamon and warm spice is just so perfect for this time of year. It warms you from the inside out!
So I jumped at the chance to recreate these flavors, in cookie form, for Go Bold with Butter.

- 1/2 cup unsalted butter
- 2/3 cup granulated sugar
- 1 tablespoon oil
- 1 teaspoon vanilla extract
- 1/2 teaspoon kosher salt
- 1 large egg
- 1/2 cup unsweetened cocoa powder
- 1/4 cup cornstarch
- 2 1/2 teaspoon ground cinnamon
- 2 teaspoons instant espresso powder
- 1 1/2 teaspoons ancho chile powder
- 1/8 teaspoon cayenne pepper
- 1 1/2 cups all-purpose flour (you may need as much as 2 cups)
- 4 ounces melted bittersweet chocolate (for garnish)
- additional ancho powder (for garnish)
- red decorating sugar (for garnish)
