Chocolate Amaretto Torte

Wow. What else can I say? This chocolate amaretto torte is definitely one of the best things I’ve made in a while.
I have been wanting to make this recipe ever since I came across it back in September. Do you guys remember when we talked about pumpkin cannoli? Well, this cake recipe was in the same cookbook I used for the cannoli shells. I’m so glad I went back to it because it is OUT-freaking-STANDING.
So, the other day I’m at Walmart picking up flushable wipes and juice boxes and stuff like that (being a mom is a very glamorous job, don’t be jealous) when I see this big holiday display. It caught my eye and so I wandered on over. I #GoNutsForNuts; they make such a great snack and as it turns out, Planter’s has some really special stuff out for the holidays.
When I spotted the cocoa dusted almonds I knew they’d make a perfect topping for this cake. After I got home I tried out the blippar app on my phone- how cool! Just scan the front of the package and a whole animated show comes up with lots of fun and useful tips on all the ways to enjoy Planter’s nuts for the holidays. After playing around with Mr. Peanut, I was really glad I had picked up a can of Brittle Nut Medley too. We snacked on it the whole time I was baking 😉
In between the fingerfuls of chocolate almond cake batter I was sneaking every step of the way, that is. This stuff is seriously chocolate-y and I just could not resist. Especially since I added amaretto-soaked cherries. YEAAAASSSSSS!
The smell of this beauty baking in the oven was driving me and my boys wild. So. GOOD! And then, we topped it with the cocoa almonds. And then, we gave it a powdered sugar shower. And then? We devoured.
I haven’t had anything so decadent in a long time. The texture is sort of like a brownie, sort of like a souffle, sort of like a cake. It’s gooey. It’s insanely chocolate-y. And those amaretto-soaked cherries just bring it to a whole different level.

Chocolate Amaretto Torte
Ingredients
- 1/3 cup (78.86 ml) amaretto liqueur
- 1/2 cup (69 g) tart dried cherries
- 14 ounces (396.89 g) dark chocolate, (70% cacao), broken into small pieces
- 1 cup (227 g) unsalted butter, (2 sticks)
- 6 eggs, (large), separated
- 1 cup (200 g) granulated sugar
- 1 cup (112 g) almond meal, (scant)
- 1/2 cup (62.5 g) all-purpose flour
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
- 1/2 teaspoon salt
- 1 cup (86 g) cocoa dusted almonds,, for garnish
- powdered sugar,, for garnish
Instructions
- Combine the amaretto and dried cherries and let soak for 30 minutes to plump.
- Preheat the oven to 350 degrees F and mist a 9-inch cake pan with non-stick spray. Line with a circle of parchment.
- Place the chocolate and butter in a large bowl and melt (over a double boiler or in the microwave). Stir together until smooth.
- Beat the egg yolks and sugar together on medium-high speed until pale and thick. Stir in the cherries & amaretto, almond meal, flour, vanilla, and almond extract, salt, and chocolate mixture.
- Whip the egg whites in a separate bowl until they form stiff peaks.
- Fold the egg whites into the chocolate mixture and transfer the batter into the prepared pan.
- Bake for 40-45 minutes, or until the cake is just set (it will still be moist in the center). Cool for 30 minutes, then flip it out of the pan and finish cooling on a wire rack.
- Top with cocoa dusted almonds and powdered sugar, slice, and serve.
