Granola is a common breakfast in our home and this homemade maple granola is easy to make and tastes way better than store bought granola. Plus, you have to like eating something you made that isn't filled with ingredients you can't pronounce!

This simple granola recipe takes just a few minutes to prepare and makes a big batch. So you'll have breakfast and snack options for at least a week or two. With pecans and a hint of brown sugar and cinnamon, this version has all the fall feels too.

  • Pecans: Pecans bring crunch and some protein and healthy fats. Feel free to swap them with other nuts. Walnuts, cashews, pistachios, sunflower seeds are all good options. A combination of nuts can also be used.
  • Sliced almonds: The sliced almonds bring more flavor and crispness.
  • Cinnamon: Adds a hint of flavor.
  • Kosher salt: Balances the flavors.
  • Oil: I use coconut oil, but canola oil is another good substitute.
  • Maple syrup: Pure maple syrup brings flavor and sweetness to the granola.
  • Brown sugar: Just a touch for sweetness.
  • Extracts: Vanilla and maple extract bring more flavor to the homemade granola. Maple syrup on it's own, doesn't impart a lot of maple flavor. The addition of maple extract helps to bring the maple flavor to life.

Step 1: In a large bowl, combine the oats, pecans, almonds, kosher salt and cinnamon.

Step 2: Place the brown sugar, oil, maple syrup, vanilla and maple syrup in a spouted measuring cup and stir until combined.

Step 3: Pour the wet ingredients over the oat mixture and mix well, until all the oats and nuts are lightly coated.

Step 4:  Spread the granola in an even layer on the prepared baking pan.

Bake until lightly golden, about 30 minutes.  Stirring and rotating the pan 180° at the half way point.

Tips & Tricks

  • Press the granola into an even layer prior to baking. This encourages even baking.
  • After stirring the granola half way through baking, press into an even layer again. This helps to create clusters of granola.
  • Avoid stirring or disrupting the granola before it cools completely. The cooling time allows the maple granola to get crispy and crunchy.
  • If adding chocolate chips or dried fruit, wait until the granola has cooled. This will keep the chocolate from melting and the dried fruit from getting crispy.
  • But, if you want melty clusters with chocolate, add chocolate chips right when you remove the granola from the oven.

  • Preheat the oven to 300°F and line a half sheet pan with parchment paper.
  • In a large bowl, combine the oats, pecans, almonds, kosher salt and cinnamon.
  • Place the brown sugar, oil, maple syrup, vanilla and maple syrup in a spouted measuring cup and stir until combined.
  • Pour the wet ingredients over the oat mixture and mix well, until all the oats and nuts are lightly coated. Spread the granola in an even layer on the prepared baking pan.
  • Bake until lightly golden, about 30 minutes. Stirring and rotating the pan 180° at the half way point.
  • Allow the granola to cool undisturbed on the pan for at least 45 minutes. If desired, add chocolate chips or flaked coconut.
