Ingredients You'll Need
The recipe card at the bottom of the post contains the full list with all of the amounts. Refer to that when you're cooking.

- Old-Fashioned Oats: For that hearty texture. Quick oats won't work quite the same.
- Sliced Almonds: They add crunch and a subtle nutty flavor.
- Brown Sugar: Light brown sugar adds just a hint of molasses flavor and helps with those crisp clusters.
- Unsweetened Cocoa Powder: Natural or Dutch-processed, either works!
- Kosher Salt: Just a pinch balances the sweetness.
- Honey: Acts as both a sweetener and binder.
- Unsalted Butter: Melted butter helps everything toast up golden and flavorful.
- Egg Whites: These help bind the mixture and create crunchy clusters.
- Vanilla Extract: Just a splash for warmth and depth.
- Mini Chocolate Chips: Added at the end, they melt into the warm granola and create irresistible bites of chocolate.

Step 1: Prep & Preheat
Preheat to 300°F, and line a baking sheet with parchment, foil, or a silicone mat.
Step 2: Mix Dry Ingredients
In a large bowl, combine the oats, sliced almonds, brown sugar, cocoa powder, and salt.

Toss to mix.

Step 3: Combine The Wet Ingredients
In a separate bowl, whisk together the melted butter, honey, egg whites, and vanilla extract until smooth.

Step 4: Stir Everything Together
Pour the wet mixture into the dry ingredients.

Stir together.

Step 5: Spread and Bake
Spread the mixture into an even layer on your prepared baking sheet.

Bake for 30 minutes, or until the almonds are lightly toasted and the granola looks dry around the edges.
Step 6: Add Chocolate
While the granola is still warm, sprinkle the mini chocolate chips evenly over the top. Let them melt into the clusters.

Step 7: Cool and Store
Let the granola cool completely on the pan. It will crisp up as it cools! Once cooled, break it into clusters and store in an airtight container.
Helpful Tips and Tricks
- Don't stir while baking! Letting it bake undisturbed helps form big, crunchy clusters.
- Use mini chocolate chips. They melt more evenly and mix into the granola better than regular-sized ones.
- Let it cool completely. It might seem soft at first, but it crisps up as it cools down.

How much vanilla is used? I double checked, but I don't see it in the ingredients list.
Thank you for the excellent catch! I will go in and make that correction as soon as I finish this reply. I'd recommend using about 1 1/2 teaspoons of vanilla extract, or 1/2 teaspoon of vanilla bean paste. But really you can add to taste! Hope you enjoy!
