Peanut Butter Banana Blondies with Bacon, aka Elvis Bars
Dense, moist, and fudgy Peanut Butter Banana Blondies are drizzled with a Maple Glaze and Sprinkled with Bacon! If you like the Sweet and Salty combo, you’ll love these Bars!
My good friend Zainab, who blogs at A Classic Twist, has been under the weather these last weeks. 🙁
It’s been a rough winter for so many of us, myself included! I’ve actually (somehow???) come down with my third illness this season. It started yesterday and I’ve been guzzling Airborne like it’s my job ever since I first felt that tickle. And, as I type, the snow continues to dump right outside my window. Looks like we are at around the two-foot mark in my backyard right now, with drifts close to four feet! And no end in sight.
All this precipitation killed our sump pump earlier this week, and left us with around 6 inches of standing water in our basement before we realized it. I had a contractor here, and it took him nearly three days to get all the water pumped out and install a new system with a battery operated backup. Oh the joys of home ownership! Just what Mr. Allie and I had been hoping to spend $2,000 on. :/ Now we just can’t wait to lug all the waterlogged boxes to the curb for the garbage men to take away. Sadly it’ll have to wait ’til next week as the Philadelphia area is in a state of emergency.
How’s that for upbeat? Sorry. The good news is, I managed to whip up THE most FABULOUS blondies for A Classic Twist yesterday, and I’ve posted the recipe over on her site. Oh my goodness! It sounds like you’ve really been through it this week! As the Greeks say: ‘Couragio!’ (This sort of means ‘Keep your spirits up’. I’m not being weird, it’s just that I’m living in Greece at the moment!) The blondies with bacon sound (and look!) incredible … I still can’t imagine baking cakes with bacon but so many people have raved about it that I am now convinced it must be good 😉 I really should try it for myself!
Thank you Helen! I’ve done bacon on cupcakes a few times, and it was pretty good, but honestly, it really works terrifically on these blondies. Something about the texture, they just compliment each other. PS- I’m totally jealous that you’re in Greece right now! Can I come??? We are in for another polar vortex by the end of this week. Pfft! Also I wanted to mention that I made your Mediterranean chicken thigh casserole on Monday night and it was TDF!!! Definitely will make again, we LOVED!!!
Allie I am sooo chuffed that you made one of my recipes! I know this must be nothing special for a seasoned blogger but this is the first time that anyone has given me some feedback on one of my recipes. So happy that you enjoyed it! As for Greece, we love it here in many ways but it can also be a difficult place to live at times. The best bonus though is the wonderful FOOD! That I will definitely miss when we leave in a couple of months 🙂

Thank you dear! I seem to be getting over the cold pretty easily, thank goodness, and as for the flood, well, it’s just things! I’m thankful that my family is safe. Sorry to be such a downer on that post but I guess I was feeling low. It was a tough week for lots of reasons, those stated and a few others I’d left unsaid. Looking forward to a fresh start next week though!

Oh man, Allie, I am so sorry to hear about your health and your basement!! Just think how wonderful spring is going to feel for all of us. It just started snowing here again too, and I just keep thinking where the heck is all of this coming from!? I need a peanut butter bar or 3 to stress eat 🙂
