Good morning my friend!  Today is an exciting day for my family.  As I sit here typing, there’s a 4-man crew in my kitchen, getting ready to break down the wall that separates it from our living room.  I am so thrilled!  I have been fantasizing about this change since the day we bought this house almost 8 years ago.

To be honest, I’m so excited about it I can barely think about anything else.  So I’m going to keep this short and sweet!

It’s fall and we are all obsessed with the pumpkin spice latte in all its forms.  I’ve seen PSL’s transformed into every kind of treat imaginable.  For today’s recipe post, I’m sharing a smoothie version.  It’s full of all the best things, like pure pumpkin puree, Greek yogurt for creaminess, warm spices (including my favorite, ginger) and espresso for that authentic coffee kick.  It’s just like your favorite coffee house drink, but better!

Start your day off right with a Pumpkin Spice Latte Smoothie! Made with real pumpkin, Greek yogurt, warm spice, and a kick of espresso!

Ingredients
  • 4 ounces brewed espresso, frozen in cubes
  • 1/2 cup pumpkin puree
  • 1/4 cup vanilla yogurt
  • 2 to 3 tablespoons pure maple syrup, to taste
  • 1/2- inch piece of fresh ginger, peeled
  • 1/8 teaspoon ground cinnamon, plus extra for garnish
  • 1/2 cup milk
  • 2 teaspoons toasted pumpkin seeds, for garnish
Instructions
  1. Place all the ingredients in the pitcher of a blender.

  2. Blend until smooth.

  3. Pour into serving glasses and garnish with cinnamon and pumpkin seeds.
