The first time I tried blue cheese dressing, I have to admit, I did not like it.
It’s a strong flavor, and I think it’s an acquired taste. In other words, you have to keep tasting it in order to gain an appreciation for it.
Now I have an appreciation for it. I actually LOVE it.
It’s my favorite on salads. And I love it on burgers too, with caramelized onions. And of course it’s the best part of Buffalo wings.

This is a creamy topping that’s a little tangy and punctuated all throughout with generous hunks of piquant blue cheese.
It’s nice and thick, and can be used as a salad dressing or a dip.

What does this blue cheese dressing recipe taste like?
This topping is smooth, cool, and creamy, with a slight tang and a really savory flavor. It’s thick and full of generous chunks of bleu cheese.
Ingredients

Mayonnaise: Forms the basis of the dressing. I like the full-fat variety, but you can use a low-calorie or low-fat option if you prefer. Or even a vegan mayo would work!

Vinegar: I like to use white wine vinegar for this. Champagne vinegar or red wine vinegar would also work, as would sherry vinegar or rice wine vinegar. Although I’d probably stay away from distilled white vinegar or balsamic vinegar. Balsamic is too dark and distilled white would maybe be a little too sour.
Seasonings: Kosher salt and ground black pepper are really all you need here, although you could add a few other spices if you like (more on that below).
Cheese: I use packaged blue cheese crumbles but you could also chop up a small wedge of blue cheese too.

This easy recipe comes together in just 2 simple steps.
Step 1: Mix up the base
Place the mayo, buttermilk, vinegar, salt and pepper in a small bowl and stir them together until smooth.

Step 2: Fold in the cheese
Then just fold in the cheese (gently!) taking care not to break the clumps up too much.

Spoon this over your salad or use it as a dip for raw veggies, Buffalo wings, or chips.
I also really enjoy it on steak! Beef and blue cheese are a match made in heaven.
And this might sound crazy, but I love to dip my fries in it!

Frequently asked questions
It’s really important to keep this dip chilled. It’s fine to leave it out on the buffet for a couple of hours, but any longer than that and it should really go into the fridge. It should keep there (in an airtight container) for several weeks.
I’m not sure I’d recommend freezing it. I have never tried honestly, but I would imagine the freeze/thaw process could cause it to separate.
This recipe makes around a cup of blue cheese dressing.
I’ve figured on a serving size of 2 tablespoons, so the batch should give you about 8 servings.

- 2 tablespoons (30 g) buttermilk*
- 2 1/2 teaspoons (12.5 g) white wine vinegar
- 3/4 teaspoon (4.5 g) kosher salt
- 1/4 teaspoon (0.5 g) ground black pepper
- 1/2 cup (67.5 g) blue cheese, crumbled
