Chocolate Peanut Butter Oatmeal Cookie Dough Ice Cream
Rich chocolate ice cream is studded throughout with chunky hunks of peanut butter oatmeal cookie dough. You’ll want to eat this all summer long!
Time for another ice cream recipe!
I made myself a promise to make more ice cream this summer. I had kinda gotten away from it and we just can’t have that. It just won’t do. Summers are for ice cream! Honestly it’s just about all I want to eat when the weather gets warm. And it’s so nice to have a homemade, no-bake dessert for those balmy nights on the patio.
If you like chocolate and peanut butter then you are going to LOVE this! I never imagined it could be possible, but I really think it’s even better than chocolate peanut butter ice cream. Cookie dough! Need I say more?
Chocolate peanut butter is my second favorite ice cream. It comes in just after chocolate marshmallow. Which, by the way, if you’re a chocolate marshmallow fan, you need to check out this chocolate marshmallow rice krispie treat ice cream because it will knock your stinky socks off. But I digress. I love chocolate peanut butter, and so does my husband. I think it’s probably his number one fave but I have a little pet peeve about it: sometimes the peanut butter is a little too frozen hard. I know, I know, I’m a tough critic. But why put up with hard peanut butter when you could have soft hunks of peanut butter cookie dough??
This recipe is positively loaded with it. Big, craggy knobs of it and you don’t even have to worry about a thing because they’re egg-free and totally safe to eat. Also there’s rolled oats in there, which give the most incredible chewiness. Sometimes simple is best, but other times you want an ice cream you can really sink your teeth into. Chocolate Peanut Butter Oatmeal Cookie Dough Ice Cream
Ingredients
- 3/4 cup (93.75 g) all-purpose flour
- 1/2 cup (110 g) light brown sugar
- 1/4 cup (64.5 g) peanut butter
- 1/4 cup (20.25 g) old fashioned oats
- 2 tablespoons (29.57 g) unsalted butter,, softened
- 1 tablespoon milk
- 1/2 teaspoon (0.5 teaspoon) vanilla extract
- 1/4 teaspoon (0.25 teaspoon) kosher salt
- 1 batch Simply Perfect Chocolate Ice Cream
Instructions
- Place the flour, brown sugar, peanut butter, oats, butter, milk, vanilla, and salt in a medium mixing bowl, and mix on medium-low speed until all the ingredients are combined. (The mixture should look crumbly, and should hold together when squeezed.)
- Make the chocolate ice cream according to the recipe directions, stirring in the cookie dough chunks before freezing hard.

Oh my this looks good! I don’t think I could ever possibly pick just ONE favourite ice cream flavour and I will very happily eat just about every flavour but I do particularly enjoy chocolatey ones with lots of bits in so this is right up my alley, yum!
