No-Bake Cherry Crumble

Too hot to bother with the oven?  Try this easy, no-bake cherry crumble!  Sweet, plump cherries are sprinkled with buttery streusel crumb topping, toasted almonds, and a dollop of vanilla Greek yogurt for a cool and comforting summer dessert (or breakfast!).

This No-Bake Cherry Crumble is loaded with sweet summer cherries  and topped with a buttery, spiced crumb topping.  With a dollop of Greek yogurt, I think it can even qualify as breakfast food!

Do you guys remember those Black Forest Waffle Sundaes I made a few weeks back?  They were so stinkin' good, man.  The CHERRIES!  It was a good thing I made a lot of extra cherry sauce because I truly could not stop eating those plump, sweet cherries.  I was dribbling them over chocolate ice cream, topping my toast with them, and even popping them straight from the jar!

Every time those cherries would call to me from their perch on the refrigerator shelf, I would think, "I just want a dessert that's pretty much all cherries."  Like, maybe 90% cherries :: 10% other yummy stuff.

Ok so I guess I'm a little obsessed with cherries at the moment.  Can you blame me???  I mean they're only in stores for such a short time every year, and they're sooooo gooooood!!!

This crumble may be my best cherry creation to date.  The focus is on the cherries.  It's cherry-centric.  Heavy on the cherries.  Cherry-tastic!

My cherries were already cooked and syrup-y sweet, so that made this crumble even easier to throw together.  And that's pretty much exactly what I did.  I threw some cherries in a bowl, threw some streusel on top, and then threw on a dollop of vanilla Greek yogurt.

It was cherry perfection.  The cherries were juicy and soft, but still with a nice meaty bite to them.  The streusel was such a nice contrast of buttery, tender warmth, with a little toasted almond crunch, and the cool Greek yogurt gave the loveliest creaminess to the dish.

I didn't bother baking it at all, because it's summer and I'm lazy.  But, this could also work really well as a skillet crisp- cook the cherries in a shallow cast iron pan, sprinkle on the crumble, and bake 'til golden brown.  Summer comfort food at it's best!

  • Place the cherries and sugar in a small pot and cook over medium-low heat, stirring occasionally, until they are tender and syrup-y (10-15 minutes).
  • Place about a cup of the cherry compote in a shallow bowl.  
  • Top with Basic Streusel and almonds.  
  • Garnish with vanilla Greek yogurt.

  6. Oooh, I'm definitely with you on the cherry thing. Aren't they just one of this earth's most delicious foods? We love 'crumbles' over here in the UK, but I just love that you've made this one so simple and summery. I bet the Greek yoghurt goes so well, too ... in Greece yoghurt with honey and fruit and nuts is an absolute staple on cafe menus. It's always delicious and this really reminds me of that!
