Oreo Cheesecake Brownie Bars

Got a cookies & cream lover in your life?  Make them these bars!  A dense, fudgy brownie is layered with creamy vanilla cheesecake and topped with crunchy bits of Oreos.  So chocolate-y and creamy, you'll swoon!

These are SO indulgent and GOOD! I could not get over how fudgy and chocolate-y the brownie layer was, and the creamy cheesecake plus Oreos was amazing! If you know a cookies & cream lover, definitely make them these bars!

Hey, how was your Easter weekend?  Did you eat lots of ham, and cheesy potatoes, and fluffy Jell-o salad?  I sure did!

It was nice and I think everyone had a great time.  We kicked off the weekend by watching the new Peewee movie on Netflix.  What a trip!  Everyone loved it, so funny!  It's a great one to watch with the whole family.

After that, my kids were begging for root beer barrels (if you've seen the movie you'll understand), so on Saturday I went out searching.  Luckily, I found some at a bulk candy store, just in time for the Easter egg hunt (in our living room, lol!).  Most of the plastic eggs were filled with root beer barrels, with the exception of the few I spray painted gold.  Those had fresh $5 bills, hehe.  The kiddos were thrilled.

And then we were off to my mom's for dinner, toting a yummy dessert (naturally) for everyone to share.

It's not exactly Easter-y, but nobody was complaining.  They know that I'm always working ahead, and they had all had plenty of Coconut Cake, Easter Basket Cupcakes, and Pineapple Creme Brulee in the weeks leading up to the big holiday.

These Oreo Cheesecake Brownie Bars were quite well-received.  I mean what's not to like, right??

The fudgy brownie layer is SO intensely chocolate-y.  If you're craving chocolate, these will not disappoint!  It's hands-down the best scratch-made brownie recipe ever, and super easy to make too.  Don't you just love a one-bowl recipe?

It gets par-baked, and while that's happening, you can whip up the cheesecake layer.  Again, super-simple, and really smooth and creamy.  It's a perfect compliment to all the rich chocolate flavor.

Top with a generous layer of big, crunchy, craggy hunks of Oreos, bake, and you're in cookies and cream heaven!

This recipe makes a big pan, and they're really rich and satisfying.  So if you've got a cookout or pot luck coming up, these are perfect!  They'll really feed a crowd, and you'll be the hit of the party!

Oreo Cheesecake Brownie Bars

Got a cookies & cream lover in your life? Make them these bars! A dense, fudgy brownie is layered with creamy vanilla cheesecake and topped with crunchy bits of Oreos. So chocolate-y and creamy, you'll swoon!

Cook Time: 1 hour 20 minutes
Chill Time:: 2 hours
Total Time: 1 hour 50 minutes

Ingredients

For the brownie layer

For the Oreo cheesecake layer

  • 16 ounces (453.59 g) cream cheese, (2 blocks), softened
  • cups (133.33 g) granulated sugar
  • 2 tablespoons cornstarch
  • 3 large eggs
  • 3 tablespoons heavy whipping cream
  • 2 tablespoons vanilla extract
  • 16 ounces (453.59 g) Oreo chocolate creme sandwich cookies, (1 family-size package), broken into pieces

Instructions
 

Make the brownie layer:

  • Preheat the oven to 325 degrees F and lightly mist a 9-inch by 13-inch baking pan with non-stick spray.  
  • Line the pan with a sheet of parchment paper, allowing the excess to hang over the sides of the pan.
  • Place the sugar, butter, cocoa, and salt in a large mixing bowl, and microwave (in 30-second increments) until the butter has melted.  Stir until combined.  
  • Add the eggs, one at a time, stirring after each addition until completely incorporated.  
  • Stir in the flour and vanilla, and transfer the batter to the prepared pan.  
  • Bake for 30 minutes.  Cool slightly before topping with cheesecake mixture.

Make the Oreo cheesecake layer:

  • Preheat the oven to 350 degrees F.
  • Place the cream cheese, sugar, and cornstarch in a large mixing bowl, and beat on medium speed until creamy.  
  • Add the eggs, one at a time, scraping the bottom and sides of the bowl after each addition.  Stir on low speed until completely incorporated.  
  • Stir in the cream and vanilla, and pour the mixture over the partially baked brownies.
  • Top with Oreos and bake for 15 minutes, then lower the oven temperature to 250 degrees F, and bake for an additional 35-40 minutes, or until the cheesecake is set around the edges and just barely jiggly towards the center.
  • Cool completely (or preferably, chill overnight) before cutting into bars.

  5. I love the idea of this recipe and since I am in Australia I am going to try this recipe with sea salt flakes rather than kosher salt. I'm hoping the brownie layer still tastes as it should. Should I be changing the amount of salt in this instance from half a teaspoon? I'll try it out like this anyway and see how it goes 🙂 Thanks!

  6. Oh my gosh, I LOVE the idea of having a brownie as the bottom layer of a cheesecake dessert! These bars look phenomenal...I can't imagine anyone would ever complain about these making an appearance on a holiday dessert spread. YUM!
