Oreo Cheesecake Brownie Bars
Got a cookies & cream lover in your life? Make them these bars! A dense, fudgy brownie is layered with creamy vanilla cheesecake and topped with crunchy bits of Oreos. So chocolate-y and creamy, you’ll swoon!
Hey, how was your Easter weekend? Did you eat lots of ham, and cheesy potatoes, and fluffy Jell-o salad? I sure did!
It was nice and I think everyone had a great time. We kicked off the weekend by watching the new Peewee movie on Netflix. What a trip! Everyone loved it, so funny! It’s a great one to watch with the whole family.
After that, my kids were begging for root beer barrels (if you’ve seen the movie you’ll understand), so on Saturday I went out searching. Luckily, I found some at a bulk candy store, just in time for the Easter egg hunt (in our living room, lol!). Most of the plastic eggs were filled with root beer barrels, with the exception of the few I spray painted gold. Those had fresh $5 bills, hehe. The kiddos were thrilled.
And then we were off to my mom’s for dinner, toting a yummy dessert (naturally) for everyone to share.
It’s not exactly Easter-y, but nobody was complaining. They know that I’m always working ahead, and they had all had plenty of Coconut Cake, Easter Basket Cupcakes, and Pineapple Creme Brulee in the weeks leading up to the big holiday.
These Oreo Cheesecake Brownie Bars were quite well-received. I mean what’s not to like, right??
The fudgy brownie layer is SO intensely chocolate-y. If you’re craving chocolate, these will not disappoint! It’s hands-down the best scratch-made brownie recipe ever, and super easy to make too. Don’t you just love a one-bowl recipe?
It gets par-baked, and while that’s happening, you can whip up the cheesecake layer. Again, super-simple, and really smooth and creamy. It’s a perfect compliment to all the rich chocolate flavor.
Top with a generous layer of big, crunchy, craggy hunks of Oreos, bake, and you’re in cookies and cream heaven!
This recipe makes a big pan, and they’re really rich and satisfying. So if you’ve got a cookout or pot luck coming up, these are perfect! They’ll really feed a crowd, and you’ll be the hit of the party!

Got a cookies & cream lover in your life? Make them these bars! A dense, fudgy brownie is layered with creamy vanilla cheesecake and topped with crunchy bits of Oreos. So chocolate-y and creamy, you'll swoon!
- 2 1/2 cups granulated sugar
- 1 1/4 cups unsalted butter (2 1/2 sticks), cut into small pieces
- 1 3/4 cups unsweetened cocoa powder
- 1/2 teaspoon kosher salt
- 4 large eggs
- 1 cup all-purpose flour
- 1 teaspoon vanilla extract
- 16 ounces cream cheese (2 blocks), softened
- 2/3 cups granulated sugar
- 2 tablespoons cornstarch
- 3 large eggs
- 3 tablespoons heavy whipping cream
- 2 tablespoons vanilla extract
- 16 ounces Oreo chocolate creme sandwich cookies (1 family-size package), broken into pieces
-
Preheat the oven to 325 degrees F and lightly mist a 9-inch by 13-inch baking pan with non-stick spray.
-
Line the pan with a sheet of parchment paper, allowing the excess to hang over the sides of the pan.
-
Place the sugar, butter, cocoa, and salt in a large mixing bowl, and microwave (in 30-second increments) until the butter has melted. Stir until combined.
-
Add the eggs, one at a time, stirring after each addition until completely incorporated.
-
Stir in the flour and vanilla, and transfer the batter to the prepared pan.
-
Bake for 30 minutes. Cool slightly before topping with cheesecake mixture.
-
Preheat the oven to 350 degrees F.
-
Place the cream cheese, sugar, and cornstarch in a large mixing bowl, and beat on medium speed until creamy.
-
Add the eggs, one at a time, scraping the bottom and sides of the bowl after each addition. Stir on low speed until completely incorporated.
-
Stir in the cream and vanilla, and pour the mixture over the partially baked brownies.
-
Top with Oreos and bake for 15 minutes, then lower the oven temperature to 250 degrees F, and bake for an additional 35-40 minutes, or until the cheesecake is set around the edges and just barely jiggly towards the center.
-
Cool completely (or preferably, chill overnight) before cutting into bars.
These look unreal, Allie! Three desserts in one bar? Love it!
Thank you so much Medha!
OMG! These are all of my favourite things in one…you’ve given me some serious cravings!
I’m so happy you like them Hannah! They were so decadent!
Sounds like you had a fun Easter! And I sure wouldn’t complain if this were my Easter dessert. Brownies, cheesecake and Oreos are 3 of my favorite things. These look incredible!
Oh wow I’m so happy I managed to get three of your favorite things in one dessert! Thanks so much Marcie!
This is the only way Oreos should be eaten!! Love the layers of deliciousness on the brownies!
Thanks Jen! Yeah, I think it’s going to be pretty hard to ever go back to the regular way of eating Oreos, lol!
Wow these look delicious! Thanks for sharing. ?
My pleasure! I hope you get a chance to make them sometime soon 🙂
Wow! This looks amazing 🙂 Glad you had a nice Easter!
Thank you so much Megan! I hope you did too 🙂
It sounds like you had a great Easter! Ours was fairly low key – which was kinda nice!! And these bars … sound amazing!!
Low key is never a bad thing, am I right? Glad you enjoyed- thanks so much Ashley! xo
These bars looks absolutely amazing Allie! I want all of these!!
Oh my gosh, I LOVE the idea of having a brownie as the bottom layer of a cheesecake dessert! These bars look phenomenal…I can’t imagine anyone would ever complain about these making an appearance on a holiday dessert spread. YUM!
Thanks dear! Yes brownies and cheesecake are a perfect combination! The best of both worlds for sure. So happy you like this recipe; thanks so much for the awesome feedback!
Excellent idea, I think I am going to make one large one for my sons birthday.
haha
Great idea! I hope you all enjoy! Thanks so much for reading 🙂
I love the idea of this recipe and since I am in Australia I am going to try this recipe with sea salt flakes rather than kosher salt. I’m hoping the brownie layer still tastes as it should. Should I be changing the amount of salt in this instance from half a teaspoon? I’ll try it out like this anyway and see how it goes 🙂 Thanks!
How many grams or ounces is a Family size of Oreos? We have at least 3 size of huge here. Or how many cookies?
Hey Carolyn! I’ve actually provided a link within the recipe card, just because I had a feeling I’d be getting a question like that! If you click on through you’ll see it’s a little over a pound. I hope that helps!
Thanks Allie. That’s a great help. That’s the medium huge Family size here. 🙂
Oh my gosh, too funny! I’m so glad that helps and I hope you enjoy this recipe! It was definitely a favorite around my house. Thanks so much for reading 🙂
Any chance you have the in grams?
Hey Marianne! Check out the free printable conversion chart I created- there’s a button in the sidebar but here’s a direct link: https://bakingamoment.com/weight-conversions-for-baking/. Hope that helps!
Can I use whipping cream or cooking cream instead of heavy cream? Btw, this recipe looks great! Absolutely trying it.
Absolutely Shayne! Whipping cream and heavy cream are one and the same. Not sure about cooking cream though- I’m not familiar with that one. I hope you enjoy! And thanks for reading 🙂
Hi Alllie.. let me start by saying I absolutely love love love your blog.. such easy recipes .. just wanted to check .. if I were to halve
This recipe which pan do you think I would have to use :).. look forward to hearing from you soon !!
Hi Vaishnavi! Thanks for the sweet compliments! This recipe is written for a 9×13-inch pan, so if you wanted to halve it you could use an 8×8. Good luck and enjoy!
I made these today and they are phenomenal! I will definitely make them again and again!
So glad you like them Melinda! Thanks for the great feedback!
These look amazing! Can I use a box brownie mix with this recipe?
I was looking for a recipe like this and decided pn yours thanks to the simple pantry staple ingredients. Box mixes are not common here in Spain, and much more expensive, of course. I made these using lactose free cream cheese and lactose free whipping cream, and they were amazing, just what I was hoping for in this combo dessert. It was perfect for our ladies night and dessert contest!
I’m so happy to hear that Rachel! Thanks so much for the positive feedback!
This is going to sound so stupid. I have recently found how much i love to cook so im definitely a beginner lol. Someone please please tell me i can use cream cheese frosting to replace the 2 bricks of cream cheese?
Hey Ashley! I’m afraid frosting won’t work because it’s got a lot of sugar in addition to butter and other ingredients. If you want to make cheesecake you’re going to have to get your hands on some cream cheese!
Could you make these with a cupcake baking sheet?
Do you mean like a cupcake pan? You probably could but I’m not sure exactly what the yield would be or how long they’d need to bake.
