Salted Caramel Brownie Ice Cream with TURTLES® Clusters

Hey good morning! It’s Wednesday and I know this isn’t a typical post day for me, but I made this ice cream over the weekend and I just couldn’t wait to share it with you.
That’s right. Salted caramel. Brownies. And TURTLES® candies. In ice cream! Holy moly you guys. This is one decadent treat!
I couldn’t stop taking little tastes here and there as I was taking these photographs. It is so rich and creamy and flavorful!
It all starts with my Simply Perfect Vanilla Ice Cream recipe. If you’ve ever felt intimidated at the thought of making homemade ice cream, please don’t! I’ve been on a real ice cream kick these past few weeks and every time I do it I marvel at how easy it really is. Heat the milk, stir the yolks and sugar together, whisk the hot milk in, cook for a few minutes, and add cream. It’s that simple! It only takes about 5 or 10 minutes, and the result will blow you away. There’s really nothing better than a rich, creamy frozen custard, freshly made.
That is, unless you swirl it together with buttery caramel sauce, fudgy brownies, and DeMet’s TURTLES® candies. My love for chocolate, caramel, and nuts is well documented here and in my opinion, there are few things better than a TURTLES® Caramel Nut Cluster. The pecans- so crisp! The caramel- so gooey! All together with that smooth milk chocolate- they just take me straight to my happy place.
TURTLES® candies come in a bunch of different flavors now- you can get Dark Almond, Sea Salt, Peanut, White Raspberry… but I just love the Original so much. The flavors are so classic and they punch up this ice cream with just the right amount of crunch. Don’t you just love when ice cream is full of crunchy bits?
And brownies? Oh my goodness, brownie sundaes are my weakness. The creamy vanilla ice cream melting and soaking in to that deep, dark chocolate-y brownie… It’s like heaven on a plate and this ice cream has all that and more!
In past summers, we’ve always tried to keep busy with lots of road trips and long weekends at the shore. This year, aside from this Father’s Day weekend, we’re trying to play it a little more low-key. After 7 years in this house, our back yard is really starting to look so pretty. Our patio is strung with overhead cafe lights, we’ve got a comfy little seating area with a fire pit, all the hostas and perennials are big, lush, and flourishing, and the kids love playing on their swings and throwing the frisbee. We just love making a special meal, eating it al fresco, and lingering out there until bedtime. Treats like TURTLES® candies and this incredible Salted Caramel Turtle Brownie Ice Cream just make nights like that even more memorable.

Salted Caramel Turtle Brownie Ice Cream
- 1 batch batch vanilla ice cream
- 3/4 cup (53.25 g) roughly chopped TURTLES® Original Caramel Nut Clusters
- 3/4 cup (382.5 g) brownies,, roughly chopped
- 3 ounces (85.05 ml) salted caramel sauce
- Make and churn the ice cream according to the recipe instructions.
- Layer about 1/3 of the ice cream in a loaf pan.
- Sprinkle with about 1/3 of the TURTLES® candies and 1/3 of the brownies.
- Drizzle with about 1/3 of the salted caramel sauce.
- Repeat, 2 more times, and freeze the ice cream until hard (2 hours to overnight).
