Toffee Almond No-Churn Ice Cream Pops
These ice cream pops couldn’t be simpler to make! With just a few ingredients, you can have your popsicle and eat your no-churn ice cream too. Plus chocolate! You’ll crave these sweet, creamy toffee almond bars all summer long!

Hello everyone! Is your week off to a pretty good start? I hope you had a fun weekend and are getting into the swing of this gorgeous summer week.
It’s summer all right. We are in the thick of it now, aren’t we? Smack in the middle of steamy, hot, sticky summer. I most certainly do NOT feel like turning my oven on these days, and, to be perfectly honest, I don’t even really feel like spending a whole lot of time in my kitchen at all. It’s pretty rare, but I’ll admit, even I get into those kind of slumps sometimes.
So I knew that for this post I really wanted to keep it fast and simple. I was toying around with a no-churn ice cream recipe, and then I was like, no, popsicles are even easier, and then it hit me. Why not combine the two?
This way you get the best of both worlds. And you get tons of scrummy toasted almond toffee flavor in your ice cream bars, with just two ingredients. That’s right- two ingredients!!!
All of this is made possible by BAILEYS® Coffee Creamers. The BAILEYS® Coffee Creamer Toffee Almond Cream has all the sweetness and flavor you could ever want. Just fold it into some stiffly whipped cream and pour into your popsicle molds. Freeze overnight, and voila!
But you know I can never resist gilding the lily. So I’ve dipped them in melted chocolate and garnished with crunchy toasted almonds and toffee bits.
These pops are a total flavor bomb, and so cool and creamy! You’ll have a hard time eating just one!

- 1/2 cup heavy cream
- 2/3 cup BAILEYS® Coffee Creamer Toffee Almond Cream
- 8 ounces melted chocolate, for garnish
- 1 cup chopped toasted almonds, for garnish
- 1/2 cup toffee bits, for garnish

Whip the cream until it holds stiff peaks.

Fold in the BAILEYS® Coffee Creamer Toffee Almond Cream, a little at a time.

Pour the mixture into popsicle molds, insert sticks, and freeze overnight.

Remove the ice cream bars from the mold and dip in melted chocolate.

Garnish with toasted almonds and toffee bits while the chocolate is still wet.
