I love the combination of rich coffee and chocolate, and the little hint of cinnamon and warm spice is just so perfect for this time of year. It warms you from the inside out!

Chile Mocha Shortbread Cookies
These chile mocha shortbread cookies really pack a flavor punch! Just like the Starbucks drink, there's plenty of chocolate, coffee, and warm spice.
Yield: 4 dozen 2 1/2-inch cookies
- ½ cup unsalted butter
- 2/3 cup granulated sugar
- 1 tablespoon oil
- 1 teaspoon vanilla extract
- ½ teaspoon kosher salt
- 1 large egg
- ½ cup unsweetened cocoa powder
- ¼ cup cornstarch
- 2 ½ teaspoon ground cinnamon
- 2 teaspoons instant espresso powder
- 1 ½ teaspoons ancho chile powder
- 1/8 teaspoon cayenne pepper
- 1 ½ to 2 cups all-purpose flour
- Optional Garnishes: 4 ounces melted bittersweet chocolate, additional ancho powder, and red decorating sugar
